Ingredients:

  • 1/4 cup fresh raspberries
  • 1/4  cup fresh blueberries
  • 1/2 cup honey vanilla Greek yogurt
  • 1/2 cup almond granola

Serves 1 (as per recipe)

Instructions:

  • Put half the Greek yogurt into a small glass mason jar.
  • Layer with half of homemade granola, raspberries and blueberries.
  • Add the remainder of Greek yogurt. Then top with the remainder of fresh fruit and granola. 
  • Enjoy!

Cranberry-Mint Chutney

Ingredients:

  • 1  cup fresh cranberries
  • 1/2 cup dried cranberries
  • 1/4 cup chopped mint leaves
  • 3/4 cup sugar
  • 3/4 cup water
  • 2 tablespoon apple cider vinegar
  • A pinch of salt

Serves 2 (as per recipe)

Instructions:

  • Bring 1 cup cranberries, 3/4 cup each sugar and water, 1/2 cup dried cranberries and a pinch of salt to a boil.
  • Reduce the heat to medium.
  • Simmer until the berries pop and the chutney thickens, around 10 minutes.
  • Let it cool slightly.
  • Stir in 1/2 cup chopped cranberries, 1/4 cup chopped mint and 2 tablespoons cider vinegar.
  • Enjoy!

Garlic Butter Baked Salmon

Ingredients:

For the salmon & vegetables

  • 4 (6 ounces each) salmon fillets
  • 4 to 6 cups broccoli florets

For the garlic butter sauce

  • 4 cloves garlic, minced
  • 6 tablespoons unsalted butter, melted
  • 1 tablespoon light brown sugar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 lemon, halved, divided
  • chopped fresh parsley, for garnish
  • salt and fresh ground pepper, to taste

Serves 4 (as per recipe)

Instructions:

  • Preheat the oven to 400F. Grease a sheet pan with cooking spray.
  • Arrange broccoli florets and salmon fillets on a sheet pan. Rub minced garlic over each fillet. Set aside.
  • In a mixing bowl whisk together melted butter, brown sugar, oregano, thyme, and rosemary.
  • Pour the butter mixture over the salmon and veggies.
  • Take half of a lemon and squeeze lemon juice over everything; then, season with salt and pepper.
  • Place the sheet pan in the oven and cook for 15 minutes, or until the fish flakes easily with a fork and internal temperature is 145F degrees.
  • Remove from the oven and garnish with parsley. Serve with lemon slices.
  • Enjoy!

Perfect Baked Sweet Potato

Ingredients:

  • 4 sweet potatoes medium size, long and thin
  • 1 tbsp olive oil
  • 1 tsp sea salt or kosher salt

Serves 4 (as per recipe)

Instructions:

  • Preheat the oven to 400F.
  • Line a large baking sheet with parchment paper or foil. Set aside.
  • Wash and thoroughly dry sweet potatoes. Poke several holes in each potato with a fork, around 8 pokes.
  • Drizzle sweet potatoes with olive oil and sprinkle on salt. 
  • Gently rub the olive oil and salt onto the sweet potato skin making sure to cover the entire potato.
  • Place sweet potatoes on the prepared baking sheet and bake for 45 minutes or until the potatoes easily yield to an inserted fork or knife.
  • Let cool for five minutes before splitting open and topping with your favorite toppings.
  • Enjoy!

Creamy Spinach Soup

Ingredients:

  • 1 pound spinach, well washed, thick stems trimmed
  • 3 spring onions or 3 bunches scallions, trimmed and roughly chopped
  • 3 cups chicken or vegetable stock
  • small grating of nutmeg
  • pinch of salt and pepper
  • 1 cup heavy or light cream, half-and-half or milk

Serves 4 (as per recipe)

Instructions:

  • Combine spinach, onions and stock in a saucepan, and turn heat to medium high. 
  • Bring to a boil, and lower heat so the mixture barely bubbles. 
  • Cook, stirring occasionally, until spinach is very tender, about 10 minutes. 
  • Turn off heat, add nutmeg and a sprinkling of salt and pepper, and let cool for at least a few minutes.
  • Pour soup into a blender, in batches if necessary, and carefully purée. 
  • Return to pan, add cream, and, over medium-low heat, reheat gently, stirring occasionally. 
  • When soup is hot, adjust seasoning, and serve.
  • Enjoy!
